Tuesday 21 and Wednesday 22 February 2012

Over the past two days I've been spending some quality time with Jeff instead of blogging. So shoot me. Here are the highlights of the past two days.

Nachos made with baked beans, a tin of chopped tomatoes, mexican chilli powder, cheese, and plain corn chips.

As it was Shrove Tuesday we had some pancakes for dessert. I made them from scratch using a recipe I found on the internet. They were really good!

Went shopping on Wednesday to prepare for the Lent Vegan Challenge. I saw these cold rolls and thought they'd be a good shopping centre meal when I go vegan, as long as they didn't have egg in them. So I tried them and they didn't and they were yummy. I'm going to make my own.

After putting off the Lent Vegan Challenge for one day because Wednesday's dinner was already planned, we didn't even end up having it! Instead we had hamburgers made with Fry's burgers and the only rolls we could find in the supermarket that weren't glazed with milk and egg! Lucky they were nice rolls, and cheap! I had a piece of cheese on mine to say goodbye to the dairy days. From now on I will be vegan until Easter Monday!

Breakfast
I experimented and invented a sweet risotto using the pea and lemon risotto recipe as a guide as to how much liquid (milk) to how much rice. I halved the recipe and used 2 tbsp brown sugar, 2 tbsp caster sugar, and a good sprinkle of ground cinnamon. It was very nice but very filling and sweet. It would be good with stewed fruit in it.

Dinner
A Villis Vegetarian pasty with a salad of celery, carrot, and corn.

Dessert
Bulla Cookies and Cream Ice-cream

Snacks
After writing this post I decided I was going to try the vegan cheese that has been sitting in my fridge for a long time. It didn't make me feel like vomiting but I still can't say it was plesant. The texture wasn't appealing. This was a soy-free one so maybe I should try a soy one? I don't know, eating a lump of processed soy just seems really gross to me. How will I be vegan without a cheese substitute though? It's the dairy that is really holding me back because I've tried and tried vegan alternatives and I find them all disgusting.

Breakfast
No breakfast, just lots of....

Snacks
The rest of my The Yoghurt Shop honeycomb yoghurt.

An orange.

Some Cadbury Chocolate Bubbly

Dinner
Minestrone soup with Helga's Wholegrain Sandwich Thins with Nuttelex (vegan). I have no idea why I can't turn this picture around, I couldn't yesterday either. Oh well, you'll just have to look at things from a different perspective.

Night-time shenanigans
A friend invited me over for a drink at her place with a few other friends. My raw vegan friend Mia, made us a great salad of mushroom, tomato, corn, cucumber, lime juice, olive oil, salt, and pepper. She has a facebook group, Vibrantly Raw Recipes by Mia, if you want to check out some of her yummy and healthy recipes. I had 4 bowls of this salad.

I also had some Smith's Thins Original chips at 2am (vegan).

Friday 17 February 2012

Breakfast
Kellogg's Just Right.

Lunch
A snack lunch of an apple, some cherry tomatoes, Uncle Toby's Chewy Choc-chip Muesli Bar, and Macro Wholefoods (Woolworths) Organic Corn Chips.

Dinner
Baby spinach, pea, and lemon risotto which is a variant of pea and lemon risotto. I ate all the spinach before I remembered to take a picture though.

Snacks
The Yoghurt Shop honeycomb yoghurt.

Thursday 16 February 2012

Breakfast
Uncle Toby's Honey Oats which I made with water instead of milk like the instructions say you can. I don't recommend it, it tasted awful.

Lunch
For lunch I had some kind of microwave spinach and ricotta cannelloni which I forgot to photograph. I was gross. It tasted very fake and processed. It wasn't a frozen microwave meal either, it was just a keep-on-the-shelf one. Maybe that's why it was so bad. Anyway, I won't be having it again.

Dinner
Dinner at the shopping centre last night. I had a double cut wholemeal roll with avocado, carrot, lettuce, olives, capsicum, tomato, and bocconcini cheese. I also had a milkshake that was made of banana, milk, ice-cream, and chocolate topping. Mmmm.

Snacks
After dinner I had some Goaties, which are little freeze dried chocolate goats' milk buttons that Mum found in Coles. I liked them but Jeff didn't.

Wednesday 15 February 2012

Breakfast
Tip Top Spicy Fruit Toast with Nuttelex (vegan).

Lunch
Leftover vegetarian Dominos pizza.

Dinner
Desperate times call for desperate measures and due to a number of factors, the only food I could make was SPC spaghetti on toast. I bought the tinned spaghetti in a moment of insanity. It really is as bad as I remembered. I only ate half of it, once the initial starvation wore off I was revolted.

I had an apple for the rest of my dinner.

Snacks
6 plain Arnott's Cruskits with Nuttelex and cheese.

Wednesday, February 15

Tuesday 14 February 2012

Breakfast
A Valentine's day breakfast of Tip Top Spicy Fruit Toast with Nuttelex and a cup of black decaffeinated tea (vegan).

Lunch
We had pizza and played computer games, something we'd always said we'd do and something that wasn't too strenuous as I was still feeling a little under the weather. I had some Domino's pizza that had cheese, olives, mushrooms, capsicum, onion, and pineapple on it.

We also made some Coles brand garlic bread (vegan).

And got some Domino's Oven Baked Chips.

We didn't have dinner because we didn't feel like it after lunch.

Monday 13 February 2012

Breakfast
Kelloggs All Bran Honey Almond with tinned peaches.

Lunch
My mum very kindly gave me some lasagna that she made and a big piece of focaccia.

Dinner
Dinner at the in-laws. I had a Quorn cheese and spinach schnitzel, some chips, pasta salad, potato salad, green salad, and a hard boiled egg. I wasn't feeling too well and regretted eating so much later!

Snacks
A pink lady apple.

The return!

Hello everybody! The virus issue is resolved and I've returned! Here are some of the highlights from a week of gastronomical adventures.

Oat and Raisin cookies from Coles.

Cheese biscuits that I made myself. The recipe can be found here.

Melinda's Tuscan Style Risotto Cakes. They're quite easy to make and would be good finger food at parties or for a picnic.

They look like this when they're cooked.

I took some for lunch the next day with a fresh salad of mixed lettuce, carrot, avocado, cherry tomatoes, and cucumber.

My mum made a feast of Sri Lankan curry (vegan), rice, and homemade chapatis.

For dessert she made one of her specialties, sweet rice. It is a Hare Krishna recipe and basically consists of milk, rice, spices, and lots of sugar. Delicious.

Jeff made me a schnitzel burger using a Fry's Vegetarian Crumbed Schnitzel, toasted bread, cheese, lettuce, and tomato sauce.

I discovered a great yoghurt at the supermarket, Five AM Vanilla Bean. It's so good I couldn't stop eating it! And, of course, it doesn't use gelatin as a thickener. Yay!

I had it with strawberries.

I had it with tinned peaches, and I just had it by itself!

I found a Lean Cuisine Pumpkin, Spinach, and Ricotta Lasagna and was quite excited because I look at the frozen meals every now and then and they always all seem to have meat in them. However, I noticed that Woolworths have started stocking a lot more vegetarian ones. They are expensive but when you're feeling lazy they're great.

Pizza on toast! One of my inventions from many years ago. Basically, you toast your bread, spread some tomato paste on it, put some herbs on and whatever other toppings you want, put it under the grill and then... you have pizza on toast! Mmmm...

This was a snack lunch I packed for myself to take to work one day. I've always been a snack person, I like to have variety in my meal. I also like to take snack lunches when we're running low on things such as leftovers or instant meals, which is what I usually have for lunch. Here we have some watermelon, red seedless grapes, and an apple (all vegan obviously), an Uncle Toby's Chewy Choc Chip Muesli Bar, and some vegie chips. I've forgotten the brand name of the vegie chips and I've finished the packet so I can't go look. I believe they are vegan but again, I can't go look. I eat them quite a lot though so I'll post about them again. I get them down the health food aisle, though with the amount of salt on them I doubt they're healthy.

I've been really getting into tinned peaches. I like to eat them all the time now. I've been buying the Weight Watchers brand ones because I like to think they're healthier than the other brands. I know they're not though. Here I have some peaches on my Kelloggs Just Right with a glass of breakfast juice.

There is also another delicious yoghurt out there! The Yoghurt Shop has heaps of scrummy flavours with big chunky bits of real ingredients. What's better is that none of the yoghurts have gelatin in them! The Yoghurt Shop also sells dips. The yoghurt I bought was banana caramel. God it was good. I ate the whole tub in 2 days, almost all of it in one sitting. I'm hooked now, I want more. The Yoghurt Shop goes down as a cool company for eliminating gelatin.

I also tried something I've never tried before. I made some Uncle Toby's Honey Oats and put some chopped up strawberries and chopped tinned peach in it. It was great! I definitely recommend it.
